What is cooking?

Kalderetang Kambing

1 kilo goat's meat cut into pieces
1 cup (0.24 l) fat or salad oil
5 segments of garlic, crushed
6 potatoes, halved or quartered
1 large onion, sliced
Slices of hard-cooked eggs
Meat stock or water
6 tomatoes sliced
paprika, salt, and pepper to taste
Liver mixture
1 cup (0.24 l) sweet peas
Sliced pimientos morrone's
1/2 cup chopped ham

To prepare the dish, start by heating the fat and browning the garlic. Once the garlic is brown, remove it from the pan and proceed to sauté the onion and tomatoes. Then, add the meat and seasonings and cook until it is partly done. Transfer the mixture to a deeper pan and add enough stock to cover it. Continue cooking until the goat meat is almost tender, then add the potatoes and continue cooking. When the meat and vegetables are tender, add the liver mixture to thicken the gravy. Finally, add pimientos, peas, and ham, and serve hot. Garnish with slices of hard-boiled eggs and chopped ham on top. The recipe is from the 19th Edition of “Recipes of the Philippines”, compiled and edited by Enriqueta David-Perez.

A tribute to someone dear

The cycle of life repeats itself, and once again it is the month of May. Just like the events of the previous year, the surrounding occurrences have become history. However, nothing is permanent in our world, which is characterized by imperfection.

We will have our moments of joy and happiness, but we will also experience sadness and sorrow. Some events are out of our control, and as we age, our hair will turn gray, and time will make it fall off. Nevertheless, we will still find happiness and beauty in life. This is the destiny of human beings.
As May comes and goes, we will continue to experience the ups and downs of life. As we age, we will gradually lose our physical and mental capacity. But ultimately, we will breathe our last with a smile on our face and express gratitude to God for a fulfilling life. Thank you, Lord.Mike C.

Hello Sportsmen!

It's time to head out for some fishing! The fish have fattened up over the winter and are still hungry. No matter what bait you use, the fish won't be able to resist a good meal. There are many spots to choose from, so try your luck and find a good fishing hole.

Julian had a successful catch when he caught a large-mouth bass at Twin Rivers on the James River in Williamsburg, Virginia. Our seventeen-year-old grandson forgot to call Grandpa, so he threw dinner back into the water (see left picture).

According to fishing reports, numerous species are expected to migrate north as the water temperatures rise. The action is expected to get hot in late May and early June and continue throughout the summer and early fall. Although summer is the best time to fish in Virginia Beach, fishing experts say, “If there's water, there are fish.” But who knows, it could be a whale instead of a minnow!

So, happy fishing, guys!

My Fellow Gentlemen Farmers

Mr. Jefferson would have been apprehensive to hear the phrase “My fellow gentlemen farmers.” They cultivated hundreds of acres of land while we have only a small space for our tomatoes, eggplants, saluyot, and ampalaya. Nevertheless, gardening is a great exercise that refreshes and strengthens the body, provides a sense of accomplishment, and helps fight boredom.
Rey Fanugao, who is featured in the photo, has been happier since moving to his new farm two years ago.

As we approach our later years, we often search for ways to occupy our time. Gardening is a perfect option for outdoor recreation. While some people prefer walking their pets or riding their bikes around the park, I, personally, enjoy vacuuming the carpet and mowing the lawn. Ultimately, what matters most is that we find activities that bring us joy.

If you're interested in starting a garden, you can find seedlings at Home Depot or Lowe's, but they may be a bit pricey this year. Alternatively, you can check out your local farmer's market for vegetable seedlings that are ideal for making pinakbet. With a bit of luck, we can all look forward to a bountiful harvest. Have fun.

It's hard to believe that we're already in 2023. This year marks the fifth anniversary of the ZAI Newsletter, which is published by the Dawasan Blogger. As the saying goes, hope for the best, but prepare for the worst.

We apologize for any unintentional errors in our writing. English is not our native language, and we are not experts in grammar, so there is always room for improvement. We aim to deliver the best possible content, and we hope that you understand if we make any mistakes.
